Healthy Chicken BBQ Flatbread

Ahh, pizza.

It seems like every time I’m driving home from work, I either a) seem to notice every pizza place I pass, or b) am personally passed by a pizza delivery motorcycle. Pizza is everywhere. Its perfectly photogenic pepperoni is plastered onto billboards, its scent wafts under my bedroom door as my brother sticks one in the oven at midnight, and its memory haunts me as I toss oregano on veggies in a desperate effort to recreate a flavor that can’t be recreated.

Or can it?

Enter flatbreads.

You’ve probably had them before, maybe at a restaurant after scanning the options and deciding that its nutritional content couldn’t possibly be as bad as its Italian cousin. And sometimes, this is the case. But other times, the flatbreads that seem so innocent can be just as bad – or even worse than – than regular pizza, especially when accompanied by heavy additions like barbecue sauce and rich cheese.

But these flatbreads are different. They’ve got all the essentials that pack in tons of flavor without the added guilt. And a bonus? I’ve given you two recipes, one that’s more traditional, and another that shakes things up a notch with extra veggies and a Mexican kick.

Because who needs boring old pizza, anyway?


Healthy BBQ Flatbreads

Serves: 2-4 (each flatbread serves 2) | Prep: 10 min each

Traditional BBQ Flatbread:

  • 1 large flatbread
  • 1/4 cup reduced-sugar barbecue sauce
  • 1/3 cup chopped pineapple
  • 1/3 cup shredded, cooked chicken
  • 1/4 cup thinly sliced red onion
  • 2 slices turkey bacon, cooked & chopped
  • 1/3 cup part-skim Mexican cheese

Prep:

  1. Preheat the oven to 350.
  2. Spread barbecue sauce onto flatbread and top with chicken, pineapple, red onion, turkey bacon, and cheese.
  3. Cook for 7-9 minutes directly on the rack.
  4. Cut in half and enjoy!

Mexican Flatbread:

  • 1 large flatbread
  • 1/4 cup reduced-sugar barbecue sauce
  • 2 tbsp corn
  • 2 tbsp black beans
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped red bell pepper
  • 1/3 cup shredded, cooked chicken
  • 1/3 cup part-skim Mexican cheese

Prep:

  1. Preheat the oven to 350.
  2. Spread barbecue sauce onto flatbread and top with corn, black beans, red onion, red bell pepper, chicken, and cheese.
  3. Cook for 7-9 minutes directly on the rack.
  4. Cut in half and enjoy!
